Great article. Sound like you cook a lot like I do. I modify, improvise, and even make up my own version of things I have had in restaurants. People always ask me for my recipes and I don't have many recipes where the ingredients are actually quantified. Many of the established recipes that I have modified, I have lost the original recipe and cannot even remember how the original recipe went. I like spicy things but I also appreciate subtleties so I try not to add too much salt and pepper or condiments to food. It is nice to taste and appreciate the unique flavors of things like fresh veggies without all of the "fluff" sometimes. Other times the "fluff" seems to enhance the flavor of things.
